I was desperate to find a way to feed my family beef hearts. I know, that sounds weird, but the nutrients found in offal (organ meats) are some of the most absorbable to the human body. Screw the supplement capsules, eat some heart and liver and kidney! Still, getting your family to eat it is not as easy as giving them a Flinstones or Gummi Bear Chewable!
My soon-to-be-sister-in-law told me about the Peruvian dish known as Anticuchos. It's a popular street food where the heart is sliced thinly and marinated in a VERY FLAVORFUL marinade and then very quickly grilled. It's cooked about a minute, maybe 2, per side on a skewer. Then you eat those bad boys.
Mine were still nice and red inside, but so tender my daughter and I ate them all. I'm still working on the rest of the family. I slip heart and liver into stews, soups, and chili. :)
- 1 large Beef Heart
- 6 cloves of Garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 Jalapeno, seeded and minced
- 2 tablespoons Mexican Oregano
- 3/4 cup Olive Oil
- 5 tablespoon Apple Cider Vinegar
- Juice of 1 lime
- 6 shakes hot sauce
- 3 tablespoons Adobo spice
- 1 tablespoon Cumin
1. Cut the gristle and fat and silverskin away from the heart. Slice it into half inch slices.
2. In a glass bowl, mix the garlic, salt, pepper, jalapeno, oregano, oil, vinegar, lime, hot sauce, Adobo and cumin.
3. Drop the sliced heart into the marinade and make sure they get covered.
4. Cover and place in the fridge for at least 24-hours!
5. Remove fro fridge and skewer the slices leaving a little space between.
6. Cook for 1.5 minutes per side on a super hot grill, before you flip, brush the top with the marinade.
7. Serve immediately.
