Meatloaf is a notoriously "bad dish" for many people invoking childhood memory of some weird loaf-shaped animal that just didn't taste right.  My mother never made it, that I can recall.  

There are several misconceptions about cooking meatloaf.  

 

1.  You must use a loaf pan.  

Never, ever use a loaf pan.  All it does it make the meat stew in its own juices and become an oily, untastey mess,  That's why when you make it that way, most kids just want to eat the delicious, crusty, carmelized top.  Use a cookie sheet, man.  

 

2.  Cook everything together.

Yes, it can work, but the flavors won't mix correctly until the next day if you just mix it up raw and cook.  Cook all the veggies first, if only for a short time, in a frying pan with a little butter.  It gets rid of excess moisture and it develops their flavor.

 

3.  You must use 2 to 20 different meats.

Honestly.  Do you think the flavor of ground pork, veal, and beef are going to somehow create a "super meat"?  Use ground beef, that's all you need.

 

Ingredients
 

  • 1 lb ground beef 
  • 1 egg
  • 1/4 Coconut Flour
  • 1/4 cup dried parsley
  • 3 cloves of garlic, chopped fine
  • 1 onion, chopped fine (Vidalia, if you can)
  • 3 green onions, chopped
  • 1 carrot, chopped fine
  • 2 stalks celery, chopped fine
  • 1 small can tomato paste
  • 1/4 cup parmesan, grated
  • 2 tablespoons hot sauce
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons Honey
  • Salt and Pepper
  • 2 tablespoons Butter
     

1.  Put butter in a frying pan and add the onion, green onion, carrot, and celery.  Cook over medium heat until the onions are translucent then remove from heat and allow to cool.  
 

2.  In a bowl, mix with your hands carefully (no super squeezies!), the beef, egg, cocont flour, hot sauce, parsley, and parmesan.  Make sure it combines well.  Add the cooled veggies and combine again.  Let it site for 15 minutes to meld flavors.
 

3.  Combine tomato paste, vinegar, a little water, and honey in a small bowl.
  

4.  Take the meat mixture and plop it down on a cookie sheet. Hand form it into a flat loaf shape.  Now, pour tomato mixture down the top of it.  Use the back of a spoon to cover the top thickly with the tomato mixture.

Bake in a 375 oven for 35 minutes.  The top will carmelize... and there is so much top that it will make you giddy!
